Step 2: Heat a cast iron grill skillet on high heat. When the skillet is hot, add two slices of the fish and grill for 1.5 minutes per side (the center should still be slightly pink). Remove from the heat and set aside; repeat for the third slice. Step 3: Add the remaining seasoning from the dish to the skillet and cook for a few seconds. Pour the sauce onto the cooked fish.
